Serves: 16-20 balls

INGREDIENTS

  • 2 cups gluten-free rolled oats
  • 10 medjool dates
  • 5 tablespoons water
  • 3 tablespoons shredded coconut
  • 2 tablespoons cacao nibs (or vegan chocolate chips)
  • 1 tablespoon coconut sugar (optional)
  • 1 teaspoon vanilla
  • pinch sea salt to taste

INSTRUCTIONS

  1. Blend oats in a high speed blender or food processor until you get a fine consistency like flour.
  2. Add in shredded coconut and and vanilla process.
  3. Slowly add in dates and water. If using a vitamix, you may have to do this in 2 batches!
  4. Fold cacao nibs into the dough.
  5. Scoop out mixture, roll into balls and store in refrigerator or freezer!

NOTES

If you’re not using fresh soft dates, soak them in warm water for at least an hour before.
Replace 1 cup of rolled oats for cashews or replace ½ cup rolled oats for almond butter for more of a cookie dough taste.

  7. Hi Priscilla,
I can’t wait to try these cookies but we have nut allergies in our home. What can I substitute for the peanut butter? Or can it be omitted entirely? Thanks

    Reply

    1. hmm. Let me think, peanut butter is the main ingredient in it because it holds everything together. You could try another kind of butter, almond (unless you are allergic as well), or coconut butter, hazelnut butter, anything with that sort of consistency will do. And since you are taking out some flavor you could add a few drops of vanilla so enhance the cookie flavor.

      1. If you look in your healthfood isle of your supermarket (or a health food store) you can buy seed butters/spreads. Great option for those who can’t have nut spreads 🙂

      2. yes! they have nut butters and cookie butters now!

    2. Sunbutter! The texture is the same and it doesn’t taste much different. Most grocery stores (and target) carry it now.

    3. You can use sunflower seed butter! I am also allergic and i found sunflower seed butter tastes the most like peanut butter!

  9. Is this paleo? Because peanuts are not ok in the paleo diet because they’re legumes..unless I’m wrong. And the milk?

    Reply

    1. i know nothing about paleo, but since I’m a vegan now, I wouldn’t be able to have milk.

      Reply

      1. almond or coconut milk would work.

    2. Aside from answering your own question about Paleo; it’s not even a clean recipe if you choose to use any of the suggested chocolate powders because a: of the added sugar content, and b: I’m unfamiliar with the others, but Ovaltine – being a malted drink – has grain content, specifically gluten. Using plain, additive free cocoa powder would be a vast improvement.

    3. Use almond butter! Now it is Paleo.. they sell Dark chocolate chips that are paleo too!

  16. I just made this with my protein powder and I don’t think it was enough powder. My scoop is 34 grams and it was really runny, good but not doughy enough I guess! Thanks…it’s a decent substitute for the real cookie dough.
