"This is a simple worknight dish that will totally surprise you with flavor. It's great because every cook I know has all of these ingredients in their cupboards already! I got this recipe from a Cooking Light magazine and I serve it with pan fried broccoli and sweet hawaiian rolls. You can either use chicken breasts, or chicken thighs, and I recommend using boneless and skinless! This has only a medium spicy level, so just increase or decrease red pepper flakes to your taste... and enjoy!"

  • 2 teaspoons garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 12 teaspoon ground red pepper
  • 8 chicken thighs
  • 6 tablespoons honey
  • 2 teaspoons cider vinegar

  • In a large bowl, mix together first 7 ingredients (all the dry spices.).
  • Place chicken pieces in the large bowl and toss to coat. Make sure each piece of chicken is entirely covered with the spice mix.
  • Line a baking pan with foil and place coated chicken pieces on it with space between each piece.
  • In a small bowl, mix honey and vinegar with a whisk and set aside.
  • Put chicken under the broiler for 5 minutes.
  • Turn chicken pieces once, and cook for another 5 minutes.
  • Take out and drizzle or brush on 1/2 of the honey mixture. Cook 3 minutes.
  • Turn pieces one last time and brush on the other half of the honey mixture. Cook until done, and keep warm in the oven until ready to serve.

  2. This was very easy to make, but the tastes just didn't meld together well for me. It seemed they fought each other. I really expected to love this, but it just wasn't what I expected. I used 2 boneless skinless chicken breasts, and had to cook them twice as long as posted to get them done....so the juices ran clear. Sorry this wasn't more to my taste....it is really easy to make!

  4. The spice mix certainly has a kick to it and the honey glaze tempered it beautifully. I quartered a whole 1.5K chicken and made up a 1.5 quantity of the spice mix which just gave me enough to coast all 4 quarters. Highly recommend lining your baking dish, will make cleaning up a breeze. I put the tray into a 175C fan forced oven (skin side down) for 15 minutes and drizzled half the glaze over and returned to the oven for a further 15 minutes and turned the pieces and drizzled the remaining glaze over the pieces and baked for a further 15 minutes - the result was a moist, bity with a hint of sweetness and a crispy skin piece of chicken. Thank you Melvin'sWifey for a recipe that I would like to try with other cuts of meat, made for Everyday is a Holiday tag game.

I started cooking just by helping my Mom out in the kitchen as a little girl. I preferred baking over cooking, as I loved getting all into measuring things and stirring. I always got to stir!However in the past 5 years I've been the one responsible for making nightly dinners. At first this consisted of the same 10 or so dishes in a constant rotation, but that quickly became boring and I remembered how much my Mom would complain when I was younger about how she always made the same things and she never knew what new dishes to try! Obviously 20 years ago, Zaar wasn't around! I still cook a lot of the same type of dishes my Mom cooked when we were younger and I try to incorporate as much fresh fruit, vegetables, and herbs into my meals as possible. However Melvin's favorite food of all time is fried chicken so... I make sure he gets a fresh vegetable on the side!My favorite cook book is my staple cookbook which is the old red and white Better Homes Cook Book.
