What are Hawaiian Haystacks?

Hawaiian Haystacks are a Chicken and gravy dish served over rice and topped with all the things. Literally. Cheese, chicken, olives, mandarin oranges, green onions, carrots, pineapple and (my personal favorite) chow mein noodles. (See, chow mein noodles.. remind me again why these are HAWAIIAN Haystacks? 😂) I don’t care what they are called, just know that they are GOOD!

Hawaiian Haystack Recipe Ingredients

Making Hawaiian Haystacks have never been easier- all you’ll need are a few staple ingredients and a rotisserie chicken.

  • Cream of Chicken Soup– If you don’t love canned soup, feel free to make your ownHomemade cream of Chicken Soup.
  • Sour Cream
  • Milk
  • Shredded Cheddar Cheese– I like to use sharp cheddar cheese to make the sauce extra tangy.
  • Garlic Powder
  • Rotisserie Chicken– This just makes this meal even easier. You could easily use leftover chicken from another meal, though!

How to make Hawaiian Haystacks

All you’ll need to do to make the gravy is combine these above ingredients in a sauce pan and heat through. The exact ingredient amounts will be listed in the recipe card below.

Servings: 6 servings

Ingredients

  • 3 cups chicken broth
  • 2 small cans cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 cups diced rotisserie chicken

Topping Ideas

  • shredded cheese
  • green onions
  • olives
  • mandarin oranges
  • pineapple chunks
  • chow mein noodles
  • cooked rice, to serve

Instructions

  • In a sauce pan over medium heat, whisk together the chicken broth, cream of chicken soup, sour cream and diced chicken.

  • Cook until bubbling and heated through.

  • Add the shredded cheese to the mixture and stir until melted.

  • Serve over a bed of rice with your desired toppings.

Notes

If using chicken breasts, I would suggest cutting the chicken breast into ‘tender sized’ strips and then following the directions as written.
