My one-year-old son LOVES fruit. He loves veggies. He loves all of the healthy food, and is so easy to feed! My 6-year-old daughter, however, would prefer to live on a diet of processed, unhealthy foods. It is torture trying to get her to eat anything healthy. This can pose a particular challenge when I pack her lunches for school. She would love if I packed her lunchables everyday, but giving her a balanced diet of wholesome foods is a priority of mine. That is why I end up hiding fruits and veggies in her lunches. So, in my pursuit of health(ier) foods, I decidedto put together an organic banana bread recipe to add to her lunch this week.

Organic Banana Bread Recipe

This organic banana bread recipe has been a favorite of hers since she was a toddler. I have modified it over the years, swapping in maple syrup for organic sugar cane, and adding in organic ingredients as we went along. I now make it completely organic, because the ingredients that are in this organic banana bread recipe are ingredients that I typically buy organic. Now, I will say that not everything I buy is organic… sometimes I am not willing to pay the high premium to buy organic versus non-organic. For instance, when it comes to fruit, I generally buyorganic fruit for the dirty dozen, and otherwise, I will shop for a good deal or the freshest looking produce.

Trader Joes is my favorite place to shop right now, as they have a great selection of organic foods, and it is the cheapest I have seen in my city. Kroger stores also have a great selection, at a reasonable price. I have heard that Costco is a great place to shop in bulk, and has a ton of organic options, but I haven’t been there yet. It is on my list of places to visit soon!

One last thing, my daughter is getting to the age where I want to start teaching her about cooking/baking, but in a way that she will find engaging. I decided to make a coloring page with the ingredients of our banana bread. She could color as I baked, and also learn about the ingredients in the organic banana bread recipe. Here is our organic banana bread recipe. It is perfect for breakfast, snack, or lunch side. Kids and adults love it. It’ll keep fresh for about a week (not that it’ll stick around that long!).

Ingredients

  • 2cupsorganic flour
  • 1tspbaking soda
  • 1/2tspbaking powderaluminum-free
  • 1/2cupmelted organic butter
  • 1/2cuporganic maple syrup
  • 1organicfree-range egg
  • 2ripe organic bananas
  • 1/8cuporganic whole milk

Instructions

  1. Preheat oven to 350 degrees. Grease a 5x9 pan with butter.

  2. In a medium bowl, combine flour, baking soda and baking powder, and mix well.

  3. In a large bowl, stir together melted butter and maple syrup. Add in egg, bananas, and milk, then mix well (a few banana lumps are okay!). Gradually add flour to wet ingredients, 1/2 cup at a time, stirring after each addition, until fully incorporated.

  4. Pour batter into greased pan, and bake for 50 minutes, or until an inserted toothpick comes out clean.

      I haven’t tried this recipe with coconut flour before, but the ratios are different for coconut flour as a substitute for all purpose flour. Here’s more info: https://nourishedkitchen.com/baking-with-coconut-flour/

      I would use 3/4 cup of cane sugar to substitute the maple syrup.
