I love salads. I eat them almost everyday and I never tire of them. Of course they are often loaded with tasty ingredients like a variety of meats, cheeses, crisp bacon, crunchy nuts, salty olives, you name it.

Also my favorite burger is a bacon blue cheese burger so today I thought I’d make that into a salad so I could eliminate the bun and enjoy all that crunchy lettuce. The result is this very tasty keto bacon cheeseburger salad.

Usually I like to use good ingredients when I can, like grassfed beef, uncured bacon and good quality blue cheese and yet trying to keep it low carb.

Regardless of diet considerations, this low carb bacon blue cheeseburger salad is super tasty and my husband and I both ate this for a meal andloved it!

Recipe ingredients I used.

For the salad base I like to use Romaine lettuce because it’s hearty and stands up to the hamburger and other ingredients. You can of course whatever you want like iceberg lettuce, leaf lettuce etc.

Also I just sliced red onion as that is what I like on my burgers but you can use any kind of veggies like such as cucumbers, radishes, grape or cherry tomatoes, min bell peppers. It’s up to you what you want to put in your base salad.

The simple vinaigrette is just lemon juice, olive oil, salt and pepper. I wanted the rest of the ingredients to stand out. But you can use whatever dressing you want. Make sure to check the nutrition label for the carb count if you are counting carbs. Ranch dressing with the blue cheese will create a somewhat blue cheese dressing if that interests you.

Lastly for the rest of the burger toppings I used lean ground beef, 2 slices of bacon and crumbled blue cheese. Pickles would also be good on this salad if you like them. Make sure to use dill pickle slices as they have little carbs.

How to make a keto bacon cheeseburger salad.

Step 1: First thing you need to do is brown ground beef so that it tastes like a hamburger. Heat up a large skillet to medium high heat. Add the ground beef, brown for a minute or two and turn the heat down to medium heat. It’s good to use lean beef for the recipe as you don’t want a greasy salad.

Sprinkle the beef with seasonings as it’s brown and when it’s cooked through to your liking take it off the stove to cool a bit. You can also spoon the cooked ground beef from skillet onto paper towels to get some of the grease.

Step 2: Meanwhile make your salad base. You can really use any kind of lettuce you want. I like romaine because it’s a hearty lettuce. Also you can use your choice of vegetables that want in it. I stuck to just red onions today because that’s what I would like on a burger.

Step 3: Next whisk together the lemon juice, olive, salt and black pepper. This is the simple lemon vinaigrette for the salad. I use a 2-1 ratio of lemon juice to olive oil but taste it first to see if that’s to your liking and adjust if necessary.

Note I use a simple dressing because you want the other hamburger ingredients stand out. However again you can use whatever dressing you want. I have plenty of low carb salad dressing recipes on this blog so check them out.

Toss the salad ingredients with the dressing and place in a a larger salad bowl.

Step 4: Now place the seasoned ground beef on top of the lettuce, then the cooked bacon crumbles and lastly the crumbled blue cheese.

If you are not a fan of blue cheese you can try another like feta cheese, goat cheese or even sharp cheddar cheese. I also have a recipe for keto croutons if you want to use those too!

Store leftovers in an airtight container. Please scroll down for the printable recipe card.

The salad should last at least a day in the refrigerator without getting soggy. Unless you use a more fragile lettuce like spring mix.

And that is all there is to this simple keto recipe! It’s definitely as satisfying to me as a burger and I feel much better after I’ve eaten because bread doesn’t always agree with me.

Note you can make this salad into any kind of burger you want. Just use your favorite burger toppings. Try to keep count of the carbs though as they can all add up.
