Cinnamon Chip Scones and Sunday Morning

There are certain foods you eat because you’re trying to be smart and fuel your body with a healthy diet. There are others you eat because you love them and because they become a tradition in your home. This cinnamon chips scones recipe falls in the latter category and has become a go to treat in our house on special occasions and on those weekend mornings when you just want a little something extra and delicious to start your day. These cinnamon chipscones are amazing and they pair well with a lazy Sunday morning, a good cup of coffee, and the sudoku or crossword puzzle-like activity of your choice. Our kids love them too which is great because it’s not always easy to find kid friendly items that the whole house loves. You might consider having yourkids eat a healthy breakfast with lots of fresh fruit in order to earn their scones. That’s how we do it in our house and when our kids hear that cinnamon scones are in the oven it’s not long before theirbreakfast plates are empty and they’re ready for scones.

There are Good Scones and Bad Scones

Have you ever wandered into a cafe or Starbucks and been enticed by the scones only to instantly regret it after the first bite when it explodes into a dust cloud of crumbs? If so, you are not alone. I also dislike the crusty sugar you often find on theoutside of a lot of scones. What’s that all about? Get that off of there! After being disappointed by several bad scones my search for a good scones recipe began. I figured if I found a few good scone recipes online I could try them out and then, hopefully, tweak the scone recipeI liked best into something really delicious.

Forgive me for not remembering all the recipes I tried out, but eventually I arrived at a winning recipe for delicious cinnamon scones. This biggest hurdle I faced was finding good cinnamon chips for baking because I couldn’t find any at our local small town supermarket and so I had to search around and find some on the internet. How did folks cook with great ingredients before google? 🙂

It’s all about the Cinnamon Chips

Without a doubt the star ingredient that goes into this recipe arethe cinnamon chips — it’s right there in the title after all, Cinnamon Chip Scones! With that in mind I say to you, not all cinnamon chips are created equal. We found this out the hard way when we strayed from our go to brand of cinnamon chips only to be met with serious disappointment when our scones didn’t live up to the level of deliciousness we had come to expect. Since that experience we always try to have cinnamon chips from King Arthur Flour on hand (I think you can make 3-4 batches from 1 package). We often buy our flour there too since they seem to make high quality ingredients. If you find a different kind of cinnamon chip that you prefer, great! But we definitely recommend the King Arthur cinnamon chips if you are struggling to find one you like and we stress the importance of this ingredient. Whenever I make these cinnamon chips scones I’m always surrounded by our kids who are each trying to steal cinnamon chips for an advanced taste test. Hard to blame them!

Scone Morning = Happiness for All

Everyone in our house is happy when it’s a cinnamon scone morning because everyone loves them! But I’m also happy because they are so easy to make and then my husband Greg is always happy to do the kitchen cleanup after being rewarded with scones. When I first made them my son Sam said,“Mommy, I’m taking big bites because these cinnamon scones are so yummy!” and then continued with “Mommy, now I’m licking the plate.” Hard to beat the lick the plate endorsem*nt.

Easy Cinnamon Chip Scone Recipe

Cook Time: 18 minutes minutes

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 1 stick butter
  • 1 cup cinnamon chips (We love King Arthur Flour Cinnamon Chips)
  • 1 egg , separated
  • 1 tsp vanilla extract
  • 3/4 cup buttermilk

Instructions

  • Preheat oven to 375 degrees F.

  • Mix flour, baking powder, baking soda, salt, and sugar in a bowl.

  • Cut in butter with a pastry blender.

  • Stir in cinnamon chips.

  • Mix egg yolk, buttermilk, and vanilla in a pyrex measuring cup.

  • Add to dry ingredients.

  • Stir until just combined.

  • Scrape out onto floured surface.

  • Knead 6-8 times.

  • Divide dough in half.

  • Form 6 inch circle with dough and cut each circle into 6 triangles.

  • Place on baking sheet (not greased).

  • (Optional) We usually skip this step, but you can brush the tops of your scones with an egg wash if you wan to give them some extra color.

  • Cook for 15-18 minutes at 375 degrees. (rotate 180 degrees at halfway point)

  • Cool on a wire rack.
